Triple Berry Summer Salad

Start with those summer berries plus some other fresh ingredients. Berries are flying off the shelves at my grocery store these days as they’re in-season, inexpensive and tasting great, so I included plump blueberries, sliced strawberries, and juicy raspberries into the salad, along with herby basil, and cool avocado. Include any type of berry you want though!

Place chopped baby spinach onto plates then add the berries, avocado, and basil on top, and then sprinkle with toasted sliced almonds.

Next, crumble fresh goat cheese or feta cheese on top. Finish off with a drizzle of Strawberry Balsamic, or any olive oil-based salad dressing, then dig in. Easy, right? Fabulously fresh, no-cook, and light yet filling from the goat cheese and avocado. Enjoy, enjoy!

Red, White, and Blue Easy White Wine Sangria

Red, White and Blue Sparkling Sangria

You only need two ingredients to make the sangria  – a white Moscato wine and Triple Sec liqueur – to make this quick and easy.  Both of these are extremely sweet so you won’t need to add any extra sweetener like simple syrup or soda pop. You could also use a less sweet wine if you prefer. But generally, sangria is very sweet so the Moscato works well.

Making the sangria is super easy. Pour the entire bottle of Moscato into a large pitcher. You could also use a punch bowl. Add half a cup of triple sec to the Moscato and stir.

Slice up a few raspberries or strawberries and add them to the sangria. Use whole berries to garnish cups, if desired. Add a handful or two of blueberries. Mix it up by using blackberries for the blue.

Let the sangria sit for as long as needed but you will want to serve it chilled. Serve in wine glasses or plastic cups. It’s great either way!
